Recipe of the Week

Pumpkin Pie Cake

Preparation Time: 15-20 minutes

Level of Difficulty: Easy

 

Ingredients: 

4 eggs, slightly beaten

1 large cans pumpkin (not the already made pie filling)

½ cup white sugar

1 tsp salt

2 tsp ground cinnamon

1 tsp ground ginger

½ tsp ground cloves

1 can evaporated milk

1 pkg yellow cake mix

1 cup chopped nuts

1 cup melted butter

 

Directions: Mix all of the ingredients from the ingredients from the eggs to the evaporated milk in a bowl until well blended. Pour into a prepared 9 x 13 in baking pan. Sprinkle yellow cake mix on top, followed by the chopped nuts, and then drizzle the melted butter over all. Bake at 325 degrees for 1.5 hours. Let cool.

 

Special Instructions: Cover top loosely with foil through most of the baking to keep nuts from browning too much. Bake for 5-10 minutes to brown top slightly, or until a tooth pick inserted into the cake comes out clean
